Lye is used in the baking of pretzels, in order to create the glaze on top of the pretzel. You allow the pretzels to sit in a lye bath, and the lye will cake the glaze right on it. Here’s an example recipe:
For this recipe you’ll need:
1 teaspoon salt
1 teaspoon yeast
1 tablespoon of brown sugar
1 cup of milk, slightly heated
2-3 cups of flour
Preheat the oven for 425 degrees, while you form your pretzels.
Mix all the ingredients together until the mix starts to ball up. Then start to mead the bread for about 5 minutes. Break apart the dough, and roll in into long strings.
Pour your 1 gallon of distilled water into a pot, followed slowly by 2 0z . 0f food grade lye; mix it in fully and stir for 2 to 3 minutes. Then carefully submerge the pretzels for about 2 minutes. Then dunk them in cool tap water for just a second.
Then bake your pretzels for about 15 minutes.
Add salt and mustard as necessary. Congratulations! You’ve created a gourmet quality pretzel.
